Philly cheese steak sandwiches on the Big Green Egg

Tomorrow is the big day we have a couple of very well marbled porterhouse thinly sliced steak marinating.

Slice up a very flat sweat vidilia onion and and some very nicely grown green peppers In a cast iron skillet on a medium heat with real,butter u til they are carmelized. Then fry the steak in the same pan with a little green beechwood for light smoke till medium rare. in the mean time we are toasting the long freash hoogie buns. then pile it one high cover with low moisture mozzarella under the broiler till melted........yum yum.

Just gotta say...THANK YOU for using real cheese!! If anything ruins that experience for me, it's the fake cheese. By golly, use real cheese!!! I know a ton of places in Philly use the junk; but it's so much better with real cheese. :)
