Made ip batch of cold smoked sockeye salmon. Then made a real nice batch of Bourbon sauce to slather on while smoking the salmon. Turned out really well. A great pate' is cup of smoked salmon, cream cheese little Tabasco teaspoon of horseradish some chili powder and green onions diced mix together roll in crushed pecans and serve over Triscuit crackers or cracker son ones choosing.
Great holiday treat. I'm going with some raw ground (95%) lamb on cocktail rye with onions and black pepper.
