Here you go I cooked this up last night it is delicious:

1 Package of skinless boneless chicken breasts.
1 medium sweet onion vadalia.
2 cans of Rotel tomatoes with chili peppers
1/4 cup of cilantro.
3 cloves of fresh garlic minced or crushed.
1 teaspoon of season salt
1-less teaspoon of cayenne  pepper
1/2 teaspoon of black pepper
14 oz can of chicken broth
1 carton small one of heavy cream
1/2 container of sour cream 8-10 oz
1/2 teaspoon of cumin
1 teaspoon of dried oregano.


In large sauce pan heat to medium about 2 table spoon s of olive oil or canola oil.
Cube the chicken into 3/4" chunks
Dice the opinion and cruces the garlic and mince the cilantro.

Throw this in and cook the chicken till all the pink disappears.

Then mix in the rest of the ingredients bring to a boil and then reduce heat to low and simmer for 30-40 minutes cover off stirring so not burn the bottom of the pan but if you bring to a simmer that should not be an issue.

This is rich flavorful chili and you can add a can of green chilis for more spice or even fresh peppers if so desired but as is was huge hit at our house.

Ha!  I made a recipe last night real similar to this one...and It was delicious.....navy bean soup with smoked ham hocks cooking right now for tonight.

I make a chicken chili, but it's closer to the tomato based variety. I use chicken broth with a whole mess of tomatoes and celery and reduce the heck out of it. Then tear up the chicken (off the bone) from the stock I made. Great for this time of year.

here is one I found online, of course I had to add bacon to it. Used a slow cooker

Creamy White Chicken Chili
Ingredients:

    1 Tbsp. olive oil
    1 onion, diced
    1 clove garlic, diced
    1 (14-oz) can chicken broth
    1 lb. cooked & cubed chicken breasts (or 1 large can cooked chicken)
   1 or 2 depending on what you like (15-oz) cans Great Northern Bean
    1 (14-oz) can corn
    1 (4-oz) can chopped green chiles
    1 tsp. ground cumin
    1 tsp. salt
    1/4 tsp. black pepper
    1 cup sour cream
    1/2 cup whipping cream

Directions:

    Heat oil in a large pot. Saut

I am anti carb so substituted the beans with Rotel tomatoes both are really great tasting chili. Being this way has allowed me to reduce may weight by 40 lbs and I feel great.

Like G I like tomatoes and use them with reckless abandon.

Yeah, but adding the cream gives you what I call the "e'touffee" effect.
