Guacamole

Any good recipes out there?  Mines straight forward, avocado, onions, salt, garlic, jalapeno and a squirt of lime.  Sour Cream?  Never!

Never sour cream!!

I do like certain chile powders to soak up some lime. Ancho and guajillo for old folks; piquin for the playahs!

Another one where I think good salt goes a long way.  Looooove guacamole.

If you go to a Mexican area in a decent grocery store, they have "Mi Costenita" spices. Piquin will be found there, like a buck ten cents a bag. Also look for the cheap saffron "azafran" for flavoring/coloring rice. Buck twenty for plenty(albeit cheap) saffron.

I should add to let time make the powder set in. I know the guacamole turns a funny color. Just mix it up again before serving. The color is superficial, only.

If you can find fresh piquins, go get 'em; but they are hard to find and grow in most of the US. Like little red bullets. My favorite chile.

Simple is better avacado, lime juice , onions , minced jalopeno , fresh minced and crushed garlic, minced fresh cilantro.
